I was wondering if there is a way to track employee absenses in the Simply payroll module? I am hoping to track both entitled vacation and unpaid sick days and be able to run a report showing these for reviews etc.

Not sure if you have your question answered already.
You can setup entitlements to track them, you can check article 13501 see if is suitable
